Directions:
Preheat skillet until medium heat. Add 1/2 cup olive oil to pan, sauté onions, peppers until tender approximately 1-2 minutes. Add zucchini and yellow squash and sauté for approximately 1 minute. Add pimentos, garlic, and seasonings, fold in pasta. Top with parmesan cheese and remainder of olive oil. Toss well and enjoy!
