| Daybreak 10/01/09: Chef Yancy Roush's Blueberry Cobbler |
| Ingredients Needed: 3 cups of water 3 cups of fresh or frozen blueberries 1/2 cup of sugar 1/2 cup of cornstarch & 1/2 of water as needed Batter 1 3/4 cups of all purpose flour 2 1/2 teaspoons of baking powder 1 1/4 teaspoon of salt 1 tablespoon of sugar 1/4 cup of butter 1 1/4 cup of milk |
| Directions: For filling: Bring water to a boil. Add sugar and dissolve. Add cornstarch and water. Mix until medium sauce. Add blueberries and fold lightly. Allow to sit 10-15 minutes to form juice. To make batter: Mix together flour, baking powder, salt, and sugar in a mixing bowl. Cut in butter with fork and then add milk. Preheat oven 450 degrees. Place blueberry mix into 9 X 12 baking dish. Top with batter. Bake about 25- 35 minutes. Test with toothpick until dry. |
