| Daybreak 10/8/09: Chef Yancy & Mayor Newell's Shrimp & Scallops |
| Ingredients Needed: 4 oz olive oil 2 tablespoons fresh minced garlic 1 tablespoon basil black pepper to taste salt to taste 1 cup whole bay scallops 1 cup whole shrimp (cleaned de veined, tail off) 1 cup Parmesan cheese or as needed 12-15 oz linguine (cooked) 1 tablespoon fresh parsley 2 tablespoons lemon juice 1/4 cup white wine |
| Directions: In a medium skillet over medium heat, add olive oil, and garlic. Saute' for 30-45 seconds, add bay scallops, and shrimp, saute for approximately 2-3 minutes or until done. Add basil, black pepper, salt and lemon juice. Add linguine and toss with Parmesan cheese until hot. Serve with your favorite salad and enjoy! |
