Chef Yancy's Roasted Peppercorn Duck with Orange Marmalade Glaze

PARKERSBURG W.Va. (WTAP) - Here is the recipe for Chef Yancy's Roasted Peppercorn Duck with Orange Marmalade Glaze.

Ingredients

1 whole duck thawed

1 orange quartered

2 tablespoons salt

1 tablespoons black pepper

Sauce

1 cup of orange marmalade

2 tablespoons of water

Bake Time- Total 3 hours

Procedure:

Preheat oven 350 degrees, rinse duck, stuff with oranges and place in a roasting dish with a screen underneath it to allow fat to drip. Carefully score top of duck with the point of your knife, cut holes in the legs to allow fat to escape. Place in oven, bake for 1 hour, turn the duck over bake for 1 hour, turn over breast side up, and bake for an additional hour. In the last 20 minutes of cooking, baste with orange marmalade glaze, be careful not to burn. Serve with your favorite sides and enjoy.
