The Sky's the Limit Stir Fry


  • 3/4 - 1 lb. lean meat, poultry, seafood
  • 4 cups instant brown rice
  • 1 cups fruit juice or broth
  • 1 Tbsp. cornstarch
  • 1/4 - 1/2 tsp. cinnamon (optional)
  • Any amount of diagonally cut vegetables and fruit like carrots, celery, snow peas, broccoli, cauliflower, peppers, onions, summer squash, pineapple, apple, pear, etc.

  • Directions

    1. Spray a wok or heavy no-stick frying pan with vegetable spray. On medium to high heat, stir-fry meat and hardest veggies first, then softer foods last, only until crisp tender.

    2. Mix juice or broth with cornstarch and cinnamon. Add juice mix to stir-fry and stir until clear and thickened. Spoon 1/4 of meat/ vegetable mixture over 1 cup rice per serving.
