Grill fresh veggies: asparagus, sliced potatoes, zucchini, eggplant, portabella's - Lots of vegetables can be successfully grilled. Basic dressings or olive oil sprays can be used to avoid sticking. With farmers market season here, lots of delicious locally grown produce is available.
Make kabobs. Skewer your favorite meats and veggies and grill away! Consider putting meat on different skewers than veggies to get cooking times right.
Make "packets" using foil. Combine fish fillet (most any fresh or defrosted frozen fish will work well) with butter (or oil based dressing), lemon slice, fresh dill, sliced veggies, chopped garlic, salt, pepper, etc. and cook over grill or grate on campfire coals for 10 - 12 minutes on high heat. Lots of fun and easy to prepare in advance.
Simple hotdogs, sausages, and burgers cooked on the grill can make a family meal fun without spending much money.
Fresh corn shucked and grilled with butter or dressing can't be beat!
Try a wheel of Brie cheese on the grill. Flip it and turn it for a few minutes. Watch it carefully and be careful as it will burn easily. This is a superb appetizer.
London broil or flank steak make a delicious meal if cut diagonally or across the grain.
Roast bell peppers over the grill flame, allow to cook, then peel burnt skin. Slice warm and serve with fresh grilled chicken strips and grilled onion with warm flour tortillas and salsa, roasted garlic, guacamole - use your imagination to put this together and add your favorite ingredients.
